INGREDIENTS :
- 350 g fresh cod, add some
- Mediterranean salt
- Pak Choi
- Red onions and garlic
- San marzano tomatoes
- Black rice
- Hazelnuts, pine nuts, cashew nuts
- Sesam for the dukkah
- Cumin
- Sea salt and black pepper
- Oregano
- Coriander seeds
- Sweet and smoked paprika
- Olive oil
- Butter
- Brown sugar
INSTRUCTIONS
In the brick :
- First layer pak Choi, then add slices of red onions, fresh garlic and the cod
- Above the Cod, add some Marzano tomatoes and Italian olive oil
- Put it on the oven for 25 minutes at 180°C
- Open the Brick and add some freshly ground black pepper
Sides : Italian black rice cooked Brazilian style
- Fry fresh garlic in olive oil -filled pot
- Add the rice and fry it for one minute
- Add cold water and simmer until the water iz completely gone
- Add a small piece of butter
Pak Choi
Fry Pak Choi in a hot pan without oil. Just before it is finished, add a little bit of malt vinegar, and let it cook. Then add a bit of brown sugar and serve it.
Home made dukkah :
- Crush hazelnuts, pine nuts, cashew nuts and sesame seeds
- Fry health of this mixture in a pan without oil
- Add the other part of the un-fried mixture
- Add cumin, sea salt, black pepper, oregano, coriander seeds, sweet, and smoked paprika.
