Pangasius in tomato sauce

INGREDIENTS :

  • 600 g of cherry tomatoes
  • 2 shallots
  • 3 cloves of garlic
  • a good splash of wine 
  • 200 ml fish stock 
  • one lemon 
  • bunch of fresh basil leaves
  • bunch of fresh parsley leaves
  • dash of olive oil
  • chilli flakes
  • pepper and salt
  • 4 pangasius fillets

INSTRUCTIONS : 

  1. Preheat the oven to 200°C. Cut the cherry tomatoes in half and put them in your Brick (with lid). Clean the shallots, halve them and cut into very thin rings. Add this to the tomatoes in the Brick. Clean the garlic and cut it into thin slices. Also put this in your Brick.

  2. Now, pour in a good splash of white wine, until there is a small layer in the Brick. Then, add the fish stock and lemon juice. Coarsely chop the basil and parsley and put this in the Brick. Stir well. Drizzle with some olive oil and season with chilli flakes, salt and pepper.

  3. Season the pangasius fillets well on both sides with salt and pepper. Place this on top of the tomatoes in your brick and put the lid on or cover with the aluminium foil. Bake in the oven, for 15 minutes. Delicious with baguette or ciabatta !
